Stephen Weeks, Founder and Executive Chef
International Experience, Local Flavours
At the heart of the Free Range Chef’s kitchen you’ll find founder and Executive Chef, Stephen Weeks. He’s honed his passion with 30 years of international experience and today invites you to enjoy his contemporary New Zealand food at Tui Hills.
As well as being available to create bespoke menus for Classic Wedding packages, he’s created a selection of Concierge menus to suit a range of tastes, eating styles and budgets. These include shared plates served family-style, walk-and-fork plates for cocktail-style dining, gourmet BBQ and many other options including menus designed for those with cost constraints.
All dietary needs are catered for. Vegetarian, gluten-free and dairy-free options come as standard. Other specific requirements can be accommodated on request.
Stephen’s culinary journey started in the UK with a National Diploma and City and Guilds. He spent several years working his way to senior levels in top restaurants and hotels around England. He soon caught the travel bug and his first adventure took him to the French Ski resort Les Menuires. By the end of the season he was hooked on travelling and learning about the varying global gastronomy.
This interest took him to France, Spain and Italy where he worked as a private chef for families in luxury villas. Stephen soon realised he enjoyed providing a more personal service and this led him to Mallorca, working in a luxury villa, where the guests included celebrities such as Sir Richard Branson.
Stephen’s culinary journey didn’t stop there. He was bound for the South Pacific. After working in Asia where he learnt about the food and culture, he arrived in New Zealand and began working in the kitchens of a five star resort in the Marlborough Sounds.
Now, having spent the last 13 years living and working in New Zealand, Stephen puts his passion and vast knowledge and experience with food into the unique personal food service provided by Free Range Chef at Tui Hills, focusing on fresh ingredients and contemporary local flavours.
